MAGIC PARVE EGG-FREE 1111 CAKE   | Meatland

1 cup self raising flour
1 cup of ground coconut (see notes)
1 cup coconut milk OR soya milk or regular milk
1 cup sugar (I use 1/2 cup and believe it's enough)
1 teaspoon vanilla
Pinch salt

Recipe can be doubled. If you don't have self-raising flour, add 1 teaspoon baking powder to each cup of flour used. See notes on adaptions.

1: Place all the ingredients in a bowl and mix together by hand.
2: Line a loaf tin with baking paper and pour mixture in.
3: Bake in a preheated 180C/360F oven for  approximately 30 - 40 minutes.
4: Frost with homemade or ready-made frosting - see our deal on parve frostings - or serve plain.

CHOCOLATE OR CHOC-COCONUT CAKE

- Replace all or half the coconut with cocoa. I often make a single batch of vanilla cake as above and a single batch of choc-coconut cake and swirl the two to make marble cake.

LEMON OR PASSION FRUIT CAKE
- Add 1 tablespoon lemon juice and the zest of a lemon to the mixture OR add half a can of passion fruit (on sale) to mixture and remaining passion fruit to frosting.  

STRAWBERRY SWIRL CAKE
- Heat a little strawberry or berry preserve till runny and swirl this through the cake before baking.

Serve as a loaf cake, double up to make a full round cake, cut into or bake in cupcake papers. Enjoy a 1111 world of opportunities.
