2 tablespoons olive oil
1 white or red onion, chopped
1 teaspoon crushed garlic
2 cups raw Basmati rice
4 1/2 cups hot chicken stock
1 to 2 large, chopped tomatoes
1 teaspoon dried thyme OR oregano
1/2 teaspoon chilli flakes OR hot paprika*
1/2 teaspoon turmeric
Coarse black pepper and salt to taste
1 red pepper, seeded and cut into short strips (optional)
3/4 cup frozen beans OR mixed frozen veg (see notes)
Optional add-ins of your choice (see list below)
2 tablespoons lemon juice
Chopped parsley

* Can substitute with smoked paprika - which is wonderful - or sweet paprika.

1: Place oil and chopped onions in a deep microwaveable bowl and cook on HIGH for 3 minutes.
2: Add garlic, raw rice, tomatoes, chili flakes or paprika, thyme or oregano, salt, pepper and stock and microwave covered on HIGH for 5 minutes.
3: Add red peppers if using and frozen vegetables and microwave covered on HIGH for a further 12 -15 minutes or until stock is absorbed and rice is tender.
4: Stir in lemon juice, optional add-ins of your choice, and parsley and serve warm.

COOK'S NOTES: Make this into an even more substantial meal by adding cooked chicken breast cubes, tofu, marinated artichokes cut in quarters, or lightly fried kosher 'shrimp' available at Meatland. The entire dish can also be made on the stove-top or cooked in the oven covered with foil till rice is tender. Frozen peas or beans are fine here but you could also use any mix you like. The Chinese frozen stir-fry mix is lovely. Feel free to make substitutions with additions like grated ginger, soya sauce and Kiddush wine.
